Dybbøl Gin

Dybbøl Gin is the second gin we have presented. Dybbøl is associated with several events in our Danish history, which we would like to pay a tribute to and our distillery is very close to Dybbøl Mill. Where Als Gin has a twist of licorice, Dybbøl Gin has a fresher fruity taste, which is due to sea buckthorn. The first bottles went on sale in the autumn of 2018.

Method

The distillation takes place in traditional copper distills and is made according to the ‘London Dry Gin’ method, where only water is added after distillation to hit the right alcohol percentage and taste. We have chosen a method where junipers are mortared and rest in the alcohol before distillation, and when we distill this is done twice to give a more rounded taste as you know it from whiskey. We run ‘small batch’ production and with numbered bottles. Dybbøl Gin is at 45%, as we believe this gives the right combination in terms of taste and expression.

Taste

The taste is in addition to juniper soft, fresh and fruity due to sea buckthorn. In addition, botanicals such as cloves and cardamom.

Appearance

The bottle is of heavy quality and the appearance is chosen as it fits well in the hand. The black cork compliments the black text and logo on the labels. The front page label is adorned with a hand drawing of Dybbøl Mill made by the Danish artist Georg Persson. Georg has made hand drawings of several well-known buildings in Sønderborg. The labels are made of thick cotton paper of good quality.

Suggested serving

We recommend a Gin & Tonic with 1 part Dybbøl Gin and 3-4 parts Organic Ginger Ale from Aqua Monaco. Find both products in our webshop. The procedure is to first put lots of ice in a glass. Then pour 1 part Dybbøl Gin followed by 3-4 parts Ginger Ale. Fresh sea buckthorn or a slice of lemon can be used as a garnish and as a last step, stir a few times with a spoon to mix the drink.
